Best wishes to you all with the start of 2012. I hope all of you have had a restful break over the Christmas and New Year festivities and are ready for a productive New Year. I enjoyed some time out with all my family down at Dunsborough and we over-indulged and are now trying to recover.


The cooking program for 2012 will have some changes. For the first time in over 30 years I will not be running my 13-week Italian Regional Food cooking course. I have decided to run the course every two years. So if you are interested in the 2013 course, let us know and we will keep you informed. In its place, the 2012 will have five classes on regional Italian food and you can choose to do any one of them or the five as a set. Those doing the set will receive the Gourmet Godfather’s Certificate of Italian Cooking with the graduation being at Jacksons Restaurant on Wednesday 17 October.


The first also features the very popular hands-on Fresh Pasta Making class and the Seafood class. There are three sessions for the steam oven demonstrations. This class continues to be very popular as people change their cooking habits to incorporate the health benefits of steam cooking. The class demonstrates how to cook fish, meat, chicken sausages, vegetables and fruit in the ovens for maximum benefits. As is usual in any of my classes, there is plenty to eat at these demonstrations.

David Infirri, our mobile pizza expert offers another program with us on his skills of making pizza. Benefit from David’s expertise and try a wide variety of pizzas, traditional, original, dessert, entrée and main course pizza. David has the happy knack of showing you a few tricks on non-pizza items that can go in the oven that he shares with you.
