Welcome To The Gourmet Godfather

Best wishes to you all with the start of another year. I hope all of us have a successful 2013 full of good health and enough wealth to enjoy it. We at DKA enjoyed some days off during the festive season to be with our loved ones. I hope that you too were able to relax and enjoy yourselves in that period.


At DKA we were delighted with the response to the Antonio Carluccio day in November. The showrooms were filled to overflowing with fans and Antonio was most gracious with his time and input. We were able to raise a significant amount for the Nightline Foundation through my friend Vince Garreffa’s Mondo Community Warriors.

For this program, we have been able to get behind the McCusker Alzheimer's Research Foundation and support the visit of Maggie Beer to Perth for Valentine’s Day. Cocktails between 6.00 and 8.00 pm at the new Perth Arena and the opportunity to hear Maggie talk about food and health will be a wonderful way to spend the evening of Valentine’s Day. I look forward to seeing you at the Perth Arena.

As in 2012, I will be running the Italian Regional Food cooking course in five blocks. You can choose to do any one of them or the five as a set. Those doing the set of classes will receive the Gourmet Godfather’s Certificate of Italian Cooking at a graduation date yet to be decided. Due to the interest and the requests received, I will run these classes twice with an evening class on a Wednesday and a day class on a Saturday.


The first program features the very popular hands-on Fresh Pasta Making class where students get to make their own pasta, including several different pasta parcels. There are four pasta dishes cooked as well as four other ravioli type dishes, all with the appropriate sauce.

The seafood class is also featured. In this class, learn how to clean seafood of various types and how to cook the various seafood in many different ways. Mussels, squid, cuttlefish, prawns, scallops and bone fish are all covered. Carpaccio of fish is served when available. The cuttlefish ink pasta is amazing.

There are two sessions for the steam oven demonstrations. This class continues to be very popular as people change their cooking habits to incorporate the health benefits of steam cooking. The class demonstrates how to cook fish, meat, chicken sausages, vegetables and fruit in the ovens for maximum benefits. As is the case in any of my classes, there is plenty to eat at these demonstrations.

A new class that I will be running will be a gnocchi making class. These delicious dumplings are becoming increasingly popular used in a traditional manner or in creative new ways when used to support other products in a dish.

The effervescent pizza man, David Infirri offers another program, demonstrating his skills of making pizza. Benefit from David’s expertise and try a wide variety of pizzas, traditional, original, dessert, entrée and main course pizza. David has the happy knack of showing you a few tricks on items on using the oven for non-pizza cooking. He shares all this and much more with you.
