Restaurant Amusè is a rising
star on Perth’s fine dining
scene, located on the eastern
fringe of Perth’s CBD.
From the inconspicuous exterior,
first-timers would not suspect that
that the venue, with its minimalistic
dining room, is the winner of the
coveted Best Restaurant Award
in the Restaurant and Catering
Awards for Excellence in 2009 as
well as being the winner of a host of
other awards.
The restaurant certainly lives
up to its name as chef Hadleigh
Troy delivers many delights to
the mouth of his patrons. With
the focus on a complete dining
experience, Hadleigh provides an
innovative degustation menu that
seeks to challenge the chef and
diner alike. The emphasis is on
providing that perfect combination
of taste and texture, based on
modern French cuisine, and
honed by his extensive experience
both in Australia and England.
Amusè varies its menu on a
monthly basis with the seasonality
of top quality produce the key
driver of the selections offered.
A petit degustation is offered midweek
as an alternative and this is
an opportunity for an introduction
to this form of dining. The result
of all the offerings is a series of
complex but perfectly balanced
dishes executed with a sense of
humour and lightness of touch.
The menu is strongly supported by a
well considered wine list. Wine may
be purchased by the bottle, or diners
can take advantage of matched
selections of wine. Carolynne
Troy is a sommelier who spends
considerable time researching and
analysing wine regions and grape
qualities to determine the flavours
and qualities of the wine that best
serve the different components of
the dish. She works closely with
husband, Hadleigh in developing the
monthly menus.
The well informed waitstaff are
intuitive, and yet unobtrusive
and this results in a seamless
dining experience.
The 11 course degustation menu
is $115.00 per person and $65.00
for eight pourings. The six course
degustation menu is $80.00
per person and $35.00 for four
matched wines.
